EQUIPMENT NOTES & SUGGESTIONS
- Food processor: To crush Oreo cookies and mix it with cream cheese.
- Mixing bowl: To refrigerate the mixture and make it easier to roll into balls.
- Measuring spoon: To make the consistent size of balls.
- Forks: To cover and take out balls from the chocolate and remove any excess chocolate.
- Baking sheet and baking paper: To keep the truffles from sticking and easy to remove them from the sheet once they’re frozen.
HOW TO MAKE OREO TRUFFLES
Prepare a baking sheet: Line an 18 by 13-inch baking sheet with wax paper or parchment paper.
Crush Oreos: Place Oreos in a food processor (entire cookie, don’t remove cream filling) and pulse to fine crumbs. Alternatively, this can be done by hand by placing Oreos in a gallon-size resealable bag and crushing it to fine crumbs.
Mix Oreos with cream cheese: add cream cheese to the food processor, and pulse in bursts until the mixture is combined. Alliteratively, you can do this using a stand mixer (set on low speed), or electric mixer, or by hand, mix until the mixture is well blended.
Chill: Place mixture in the refrigerator for 30 minutes.
Shape mixture into balls: Scoop mixture out about 1 Tbsp at a time and form into 1-inch balls, then align on the prepared cookie sheet.
Melt chocolate: Melt chocolate according to the directions on the package.
Dip truffles: Remove truffles from the refrigerator and dip them in melted chocolate. Use two forks to pour some chocolate over the top, then lift and allow excess chocolate to run off.
Let set: Return to baking sheet, immediately sprinkle tops with sprinkles if desired, then allow chocolate to set.
TROUBLESHOOTING AND TIPS
Chocolate is hardening before you’re finished: To prevent the chocolate from hardening before you’re finished, make sure to keep it warm. You can do this by placing the bowl of chocolate over a pan of simmering water, or by heating it in short bursts in the microwave. If you’re dipping the truffles and the chocolate starts to harden, you can reheat it until it becomes fluid again.
Oreo balls are falling apart: If the Oreo balls are falling apart, it could be that the dough is too moist. To fix this, you can add more crushed Oreo cookies to the mixture, or refrigerate the dough for a bit longer to firm it up. Also, make sure to roll the balls firmly and quickly to prevent it from falling apart.
Chocolate is too thick: If the chocolate is too thick, it can be hard to coat the truffles evenly. To fix this, you can add a small amount of vegetable oil or shortening to the chocolate to thin it out. It’s also important to stir the chocolate well to ensure that it’s smooth.
Uncoated candies are losing their shape: If the uncoated candies are losing their shape, it could be that they were not chilled long enough before dipping in chocolate. Make sure to refrigerate the balls for at least 30 minutes or until they are firm before dipping in chocolate. Also, when you take out the balls from the refrigerator, roll them quickly to keep their shape before dipping in chocolate.
CAN OREO TRUFFLES BE FROZEN
Yes, Oreo truffles can be frozen. They can be stored in an airtight container or zip-lock bag in the freezer for up to 3 months. To serve, take them out of the freezer and let them thaw at room temperature for about 30 minutes before serving. Freezing the truffles will not affect their taste or texture, and it’s a great way to have a treat ready for unexpected guests or for those moments when you need a sweet treat but don’t want to make a batch from scratch. It’s also a great way to have a stash of treats on hand for when you have a craving for something sweet.
